Enjoy these poems and a slice of kou kou. Kou kou is an egg dish similar to an Italian frittata. These are very simple to make and they are perfect to have as appetizers, or even in a wrap. You can enjoy these warm or cold with yogurt and salad.

Ingredients:
1 bunch kale
1 bunch parsley and/or any other greens (lettuce, cilantro, green onions)
1 handful fresh mint (optional)
1 onion
4 cloves of garlic
1 tsp baking powder
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp dried lime powder (optional)
7 eggs
1/2 cup barberries (aka zereshk)

Preheat the oven to 350F.
Wash all your greens. chop up and put in food processor.

Put all your chopped greens in a large bowl.
Peel and cut your onion and garlic. Put in food processor and then add to your large bowl with the greens.

Add in all your spices, eggs and barberries.
Mix well with a spatula until the mixture is smooth and even.

In a well greased oven tray, spread out your mixture about 1/4" thick.
Place in the oven and cook for about 30-35 mins total.
After about 20 mins, take the tray out of the oven, and cut into 4 equal large pieces. This will help cook in the centre as well. Put back in the oven a cook for another 10-15 mins.

When you take out of the oven, let it cool before you start to cut into smaller squares. The cooler they are, the easier it will be to cut and place on to a serving plate.
